Visiting the Vieux Carouge is never an innocent endeavour. People come here for the party atmosphere, La Movida, which lingers around the old Sardinian streets from dusk until dawn. People visit here for the famous Carouge entrecôte, seasoned with morels, bearnaise or spiced with three peppers.

Potato mousseline, fluffy fries, gratins and market vegetables, fish and poultry. All these recipes are Négociants trademarked, and this bistro, renowned for its authenticity, would be known as “Bouchon” in Lyon.
